My Favorite Eggplant Recipes

I like to keep it simple in the kitchen whenever possible.  If you want a quick and easy way to prepare your eggplant try one of these recipes.


Baking
Salt your eggplant first.  See "Produce Tips" on the website.
Cut your eggplant in wedges (like french fries).
Lightly brush with olive oil.
Coat with Shake N Bake.

Bake at 375 for about 20 minutes.  I'm guessing 20 minutes because when I cook I rarely measure or time things!  This method doesn't help when I'm sharing recipes.
You can serve with a side of ranch dressing.

Grilling
Cut in wedges or circles, your choice.
Place on grill and brush with olive oil.  I like to season with Ms Dash.  This contains no salt, but great flavor.  There are also many flavors to choose from.
