1/4 cup of water
1 large onion, diced
3 cloves garlic, crushed
5 cups vegetable broth or water
3 stalks celery, diced
1 large gold or red potato, diced
4 medium carrots, diced
6 large tomatoes, diced
8 medium mushrooms, diced
2 bay leaves
2 sprigs of fresh rosemary
1 cup no-salt-added tomato paste
1 cup whole wheat pasta shapes
1 cup fresh green beans
1 hand full of spinach leaves chopped
1. Heat saucepan over low heat. Saute onion and garlic in 1/4 cup of water for approx. 5 minutes or until soft.
2. Add 5 cups of water or veg broth, celery, carrots, potato, tomatoes, mushrooms, bay leaves, rosemary, and tomato paste. Increase heat and simmer for about 20 minutes.
3. Add pasta and cook for another 10 minutes.
4. Add green beans and spinach and cook for 5 minutes.
5. Add a little bit of sea salt if desired and stir through.
